With two breweries under their belt, Houraisen has a unique setup that sets them apart from other producers. Here, they combine their traditional Sake brewing skills with modern equipment, producing Sake that is truly a fusion of the old and the new. Meanwhile, their traditional brewery is where all of Houraisen's Sake is made, showcasing their expertise and mastery in the craft.
One of the key factors that contribute to the exceptional quality of Houraisen's Sake is their commitment to using rice grown in their own rice paddocks, spanning over 42 hectares. They carefully select and grow rice varieties that are best suited to the region, ensuring that only the finest ingredients are used in their Sake.
In collaboration with the local agricultural bureau, Houraisen has also developed a unique strain of rice called Yumesansui, perfectly suited to their mountainous terrain. Located at 700 meters above sea level, Houraisen's brewery and water source benefit from cool temperatures at night, creating an ideal environment for Sake production. The water used in their Sake is sourced from the mountains and is known to be one of the softest in Japan, free from magnesium and calcium. This results in a Sake that is incredibly smooth and delicate.
Despite its 160 years of history, Houraisen continues to push the boundaries and remain at the forefront of the Sake industry. Their average polishing rate for Sake is an impressive 50%, with some even reaching the Daiginjo level of 50%. With a perfect blend of tradition and innovation, Houraisen has rightfully earned its reputation as one of the most modern and innovative Sake producers in Japan.
