Ludovic Bonnardot, the mastermind behind the renowned Domaine Bonnardot in the Burgundy region of France, is not your average producer. From a young age, Ludovic showed a keen interest in winemaking, choosing to spend his days in the vineyard experimenting with natural techniques on his grandfather's grapes. Born and bred in Burgundy, Ludovic's family has a long history of winemaking dating back to 1470. This heritage is reflected in the estate's polyculture approach, with 15-hectares of land used for both wine production and the growth of blackcurrants, asparagus, and cereals. This method not only spreads the risk of crop failure but also ensures a steady source of income for the family. Ludovic's mother, Elisabeth, played a crucial role in shaping his passion for natural winemaking. As a winemaker herself, she studied alongside the father of natural winemaking, Jules Chauvet, and incorporated his techniques into her own practices. Today, Domaine Bonnardot is farmed organically, with Ludovic believing that this approach allows the true character of each of the 18 appellations and 50 plots to shine through. With vineyards averaging 45 years old, the grapes are carefully tended to and hand-harvested at their peak maturity. The white grapes are slowly pressed and fermented in oak barrels for 12-18 months, while the reds undergo a maceration process with no addition of sulfur or other products.
