Later, Clotilde wanted to put this sensory potential to good use: making wine as a career. This is why she decided to study oenology.
A young graduate, she started out with Beaujolais reds, discovered the sparkling vineyards of California, before returning to acclimatize the whites of Burgundy in Chablis.
Cellar master, she has been working to express the terroirs through the wines she has produced since 1989 .
