'Sweet, sour, and smoky, with a chalky edge and a peppery palate, but water releases blossom and a little gunsmoke.'
Dave Broom, Whisky Advocate Kilchoman was the first distillery to be built on Islay in over 124 years. The distillery was founded in 2005 by Anthony Wills and is Islay's only farm distillery, producing Single Farm Single Malt. Kilchoman is one of the few whisky distilleries in Scotland to remain independent.
Machir Bay is Kilchoman's signature peated single malt. It's a vatting of whisky matured in both bourbon and sherry casks. Named after Islay's most spectacular beach, the high proportion of bourbon barrels creates a distinct balance of classic Islay character and fresh floral complexity.
