Surprisingly, our recent visit to Pabiot’s estate was our first, but it certainly won't be our last. One of our fellow growers had already bestowed upon him the highest compliment, stating that if one were to taste Pabiot's Sauvignon Blanc blind, they would never guess its varietal.

Pabiot's approach to winemaking is a testament to his strong, silent nature. In 2006, instead of joining his father's established estate, he ventured out on his own to create his own organic domaine. After an apprenticeship with Didier Barral in Faugères, Pabiot's father, initially skeptical of his son's unconventional methods, soon recognized the superiority of his son's wines. This led to a partnership in 2010, and the birth of Domaine Jonathan Didier Pabiot.
In 2016, Pabiot's domaine became the first in Pouilly-Fumé to achieve biodynamic certification. With a focus on the stony caillottes of Les Loges, his vineyards span across the entire appellation and boast mature vines on both Kimmeridgian marl and silex. This diversity of soils allows Pabiot to produce a range of single-terroir bottlings that showcase the unique characteristics of each site.
The average age of vines in Pabiot's vineyards is 30 years, and yields are kept low to ensure richness and depth in his wines. This results in a range of Sauvignon Blancs that are far from the typical green varietal flavors associated with the region. Pabiot himself states that he strives to avoid the "green Sauvignon" and instead creates wines that are nuanced, textured, and full of character.
From the entry-level Elisa with its silky texture and chiseled acidity, to the enigmatic perfumes and lees-polished texture of Aubaine, and the intense, mineral-driven Luminance, Pabiot's wines are a true reflection of the stony soils of Pouilly-Fumé. Each sip is a journey through the terroir, showcasing Pabiot's mastery of his craft and his passion for producing exceptional French whites.
