What Is Cava Wine?
Cava is a traditional-method sparkling wine made mostly in the Catalonia region of northeastern Spain. The term "Cava" comes from the Spanish word for "cellar", where the wine is aged on lees for a minimum of nine months, giving it its signature creaminess and fine bubbles.
Unlike Champagne, which is typically made with Chardonnay and Pinot Noir, Cava often features indigenous Spanish grape varieties, such as Macabeo, Xarel·lo, and Parellada. This results in a slightly different flavour profile – think lemon zest, green apple, almond, and subtle floral notes.
Cava is a protected designation of origin (D.O.), meaning it must follow strict production standards. It’s a wine deeply rooted in Spanish culture and often poured at weddings, festivals, and family celebrations.
How Is Cava Made?
Cava is crafted using the méthode traditionnelle (also known as méthode champenoise), where the wine undergoes a second fermentation in the bottle to create its natural carbonation. This process is labour-intensive and time-consuming, but it’s what gives Cava its refined texture and persistent mousse.
After primary fermentation, winemakers add a mixture of yeast and sugar to each bottle, seal it, and allow it to undergo a secondary fermentation. The dead yeast cells (called lees) remain in the bottle, adding complexity and creamy texture as the wine ages.
The ageing period for standard Cava is at least 9 months, but Reserva Cava requires a minimum of 15 months, and Gran Reserva must be aged for at least 30 months, producing wines with more depth, nuttiness and structure.
Is Cava the Same as Prosecco?
Not quite. While both are popular sparkling wines, Cava and Prosecco are made using different methods and grapes, resulting in distinct styles.
