How's it taste?
Colour: Deep Red with purple Hue Bouquet: Wine shows incredible concentration of ripe dark/ blue fruits, dark chocolate and toasted coffee beans, dried herbs, black olive and oak spices. Palate: On the palate it delivers and broad sweet fruit spectrum, spices, cocoa powder with underlying forest floor notes. It is full body in style but round and beautifully balanced. The tannins are velvety and the palate persistence is incredible.
How was it made?
Rolf Binder Winery has been producing Bull’s Blood for more than 50 years. Unlike the Hungarian ‘Bikaver’, our blend comprises of two great Barossa varieties, Shiraz and Mataro. To give more intensity and complexity to the wine, it’s made using only the Mataro pressings taken from the Chri-Ro estate’s bush vine Mataro, planted in the 1880s. This very special fruit is blended with estate grown, premium Shiraz – some of our Hanisch Shiraz barrels even make it into this wine.

Very intense blueberry and plum-pastry aromas here with cassis and violet, too. The palate has density and depth with really long, assertive tannins. Dark-plum and black-fruit flavors carry so long. So layered and integrated. Dark cocoa at the finish. Rolf Binder’s signature wine is in excellent form in 2018.

From estate-grown bush vines planted in the 1880s, this signature blend has won a rightful place in Barossa folklore. As idiosyncratic as its name and label, this has long been one of Rolf Binder's most consistent and impressive performers. All the power and stature of pressings amplify the exotic allure of old vines. Ripe, fleshy black fruits of all kinds are impeccably framed in generous tannins (courtesy of the mataro pressings) lively acidity and classy dark chocolate oak. It's larger than life, without a step out of place.
