A very serious contender for micro distillery of the year.' 96 Points - Jim Murray, Whisky Bible 2017 Koval Distillery is the first (legal) distillery in the city of Chicago since the mid-1800s. Founders Robert and Sonat Birnecker place an emphasis on grain-to-bottle production, thoughtfully monitoring every step of the distillation process. From sourcing local, organically grown grain, to only using the "heart" cut of the distillate, Koval has established themselves as one of America's leading small-batch, independent distillers.

As the name suggests, Koval Four Grain Whiskey is distilled from a mash of four different grains - oat, malted barley, rye and wheat.

A beautifully complex whiskey, it scored 96 Points in Jim Murray's Whisky Bible 2017 , and received a Gold Medal at the 2012 International Whisky Competition.

Smooth, layered, with a rich and complex palate, this is a great example of American Whiskey.

96 Points - Jim Murray - Whisky BibleIf all whiskies were this complex on the nose, not sure this book would ever get completed. Several points to focus on, each sharp as a knife. Though oat holds sway(and checking the label ...yes oats are part of the mash bill) there is a secondary intensity of light chocolate malt and fruity rye; astonishing layering of light sugars, crystallised layers of golden syrup seemingly the anchor point; bloody hell... Taste: Quiet fantastic.... both earthy and ethereal in equal measures and as the oil spreads, mainly of an oaty flavour, so does the sharper, crisper rye. Finish: a few fainty notes at last collate, but the salivating quality of the grain is re-established at the last, helped by a few peppery spices.... One of the most intriguing whiskies on the circuit... A very serious contender for micro distillery of the year.'

Tech stuff

How's it taste?

Initial sweet malt with creamy, banana notes. Appealing grainy cereal aromas are followed by fresh American oak and hints of liquorice allsorts. The palate delivers spicy fruit-cake flavours with pie crust, cinnamon, and sticky dried fig. Finishes spicy with a maple-y sweetness.

How was it made?

Grains are sourced from a local organic farmer collective in the Midwest. The spirit is run through the 5000L pot still, specially designed to enhance the flavours of whiskey and brandy. Only the heart cut of the distillate is used - the heads and tails are collected separately and saved for future distillation. The new-make spirit is then aged in heavily charred new American oak from Minnesota.
