Based around their "Four Pillars" philosophy of Stills, Water, Botanicals and Love, their Rare Dry Gin has become universally popular. But despite all of the accolades and prestige, they still only distill in batches, producing just 460 bottles each time. This allows them to keep the artisanal, hands-on approach that we have come to know and love.

How's it taste?

Four Pillars Rare Dry Gin is crafted to deliver the best of all worlds: a perfect, classic gin and also something that would fascinate and delight even the most hardened gin fanatic. It’s spicy but with great citrus, a truly modern Australian gin. Four Pillars Rare Dry Gin captures the essence of contemporary Australia’s heritage in Europe and Asia. We’re using whole oranges which is unusual but Australian citrus is highly aromatic and supports the spicier botanicals like cardamom. The cinnamon and star anise add rich fruitcake tones, the Tasmanian pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.

How was it made?

We crafted our Rare Dry Gin to deliver the best botanical notes from all around the world. It captures the essence of contemporary Australia's heritage in Europe and Asia. European juniper berries, spices from South East Asia through to the Middle East. To that we added two native Australian botanicals, lemon myrtle and Tasmanian pepperberry. Cinnamon and star anise add rich fruitcake tones, the pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a fragrant alternative to lemon peel. Finally, we use whole organic oranges that add a highly aromatic character, a fresh Mediterranean touch that supports the spicier botanicals like cardamom.
