Fortaleza Tequila is rooted in traditions established centuries ago by the forefathers of Tequila. Don Cenobio, founder of La Perseverancia, introduced steam as a method of cooking agaves and identified the special characteristics of the Blue Weber agave - the only species of agave used in tequila production. His grandchild, Francisco Javier, established the denomination of origin for tequila in 1960. Don Javier bought a piece of land in the town of Tequila where he built a hacienda on the highest point, overlooking his rival's distillery. On this land sat a small distillery, which he named La Fortaleza, meaning "Fortitude."

Tequila Fortaleza, also known as Los Abuelos, is produced by a quality-oriented producer located in the town of Tequila, Jalisco. They use estate-grown, 100% stone-milled agave cooked for 36 hours in a brick oven with meter-thick walls. The crushed agave is washed with pure mountain water from the Volcan de Tequila to create the agave juice, called mosto. The woody fibres of the agave are removed and used as compost, and the agave mosto is naturally fermented for five days in small wooden vats. It is then double distilled using small, labor-intensive copper pot stills before being rested in American oak.

The distinctive hand-blown bottles and artisan-designed bottle tops represent the harvested heart of the agave. The resulting tequila is a testament to the dedication and craftsmanship of Guillermo Erickson Sauza, a fifth-generation family member.
