The mid-palate is awash with the flavoursof elderberry, strawberry compote and rhubarb crumble with an array of sweetspices; creating a rich and decadent flavour experience. These flavours are drawnthrough to a long, lingering finish by a combination of bright acidity and fine.
How was it made?
The St Hallett winemaking philosophy is simple - minimum intervention andmaximum attention to detail.The grapes for this Rose was harvested cold and kept on skins for 4 hours beforebeing drained off and then treated in a similar way to a white wine. The fermentswere kept cool between 12-14 degrees for 15 days, maintaining the vibrant acid andfresh fruit characters. The wine received no oak contact prior to bottling in May2020.
