How's it taste?
Medium straw with an olive green hue and brilliant clarityCantaloupe, green mango, ginger with hints of lees derived complexity.Mandarin and cantaloupe fruits spill onto a luscious palate. Some nougat and lees derived characters add further richness. A finer version of viognier with lovely acid back bone.
How was it made?
This Viognier was carefully grown in the renowned Malakoff Vineyard in the Pyrenees. With La Nina set in, a cool spring and mild summer ensued. The coolest vintage in ten years with good crop levels and long growing season. Grapes were hand harvested in the cool of the morning at optimum flavour ripeness. A great year to grow Minnow Viognier.The fruit was gently whole bunch pressed and left to settle over night prior to racking. The primary ferment was fermented at cooler temperatures to retain fruit aromas. After primary ferment it was gravity fed into older French hogs head barrels in our underground cellar for further maturing. It was left on light lees to develop further complexity for 6 months prior to bottling in October 2021.
