The fruit parcels were machine harvested inthe coolofnighttoensure they arriveatthewinery retaining all the freshness and flavour seen in the vineyard.Gentleprocessingofthe fruit including a shortperiodofskin contact for the SauvignonBlanc preceded cold settling and coolfermentationtoensurevibrancyandfreshnessis maintained.The Semillon parcel was fermented withindigenous yeast addingtothe complexityofthewine.Atthecompletionoffermentation, the wine components arematuredonlees for a short periodtoenhance the textural elementsofthe wine.Early bottling ensured the bright regionalfruit flavours in the wine are retained.
