Tasting Notes
The wine is pale gold in colour with youthful green tinges. The aroma is intense with a complex bouquet of citrus and peach fruit characters. Barrel fermentation adding charred oak and cashew nut to the nose and palate. The flavours of stone fruit and lemon zest are sustained with fresh acid and toasty oak in a rich well structured wine. Pair with roast chicken and sage or pork belly.
Winemakers Note
This wine is produced from grapes grown at the Pothana Vineyard on sandy loam with limestone sub soils. The vines are over 30 years old and low yielding, producing less than 2 tonnes per acre annually. The grapes were hand picked and whole bunch pressed. The resulting juice was settled for 24 hours. The wine was fermented and matured in 30% new French oak barrels with the balance being in 2 and 3 year old French barrels. It was stored on lees for 6 months prior to bottling.
