One of the most idiosyncratic personalities in the region, Timo Mayer is larger than life. He relocated from his native Germany long ago and relocated to the Yarra valley where he crafts minimal intervention wines that have achieved this legendary, cult status in wine bars and restaurants around the country. Meeting him is an experience that few forget. He thinks of himself as a simple ‘farmer’ but he’s so much more than that. It would be hard to imagine the Yarra Valley without him. Bloody Hill is his second label (his first is simply called ‘Mayer). The original release was Pinot Noir from the close planted organic vineyard that Timo describes as ‘bloody steep’. Now Timo’s son Rivar has taken the lead with the label and the winemaking, sourcing fruit from growers all over the valley that he and his father have built friendships with. How was it made?
100% Syrah. Whole bunch pressed after one night on skins and fermented in barrel. Fresh Herb /berry potpourri, ripe but dry berry fruit with savoury undertones, soft with virtually no tannins, but structure non the less.
