Winemakers Note
De-stemmed only to a concrete fermenter followed by a cool soak for 48 hours. Fermented for 7 days on skins peaking at 28ºC before being pressed at 4 Baume to finish fermenting in stainless steel. Racked to stainless steel for MLF before being racked to oak for maturation for 5 months.
