Vibrant and fresh aromas with complex notes of cashew, lime andbutterscotch. The palate is generous and textured with mid palate sweetness and a lovely lingering refreshing acidity.
How was it made?
Hand -picked in the cool of the morning and chilled in cool room overnight before being whole bunch pressed directly to barrels. As the juice warmed up in barrels, ferment commenced with natural yeasts. Fermentation was cool and even at around 18 degrees C.Once fermentation was complete the barrels were topped and periodically stirred to enhance mouthfeel and palate weight. To furtherincrease texture 25% of the wine was inoculated with Malo Lactic bacteria. Following Malo lactic fermentation SO2 was added to reduceoxidation and then matured in barrels for 8 months prior to stabilization and bottling in December 2020.

A pale straw-gold colour. Peach, thyme, and balsa aromas. Lots of fruit power that has been balanced to equally powerful oak work bringing tension and savoury complexity. Textural notes accentuate the dry and savoury character. A lot of chardonnay for the price
