How's it taste?

How was it made?
The 2020 vintage started well with warm,settled conditions during flowering, ensuringgood crop levels. The summer that followedpromoted healthy fruit with great flavour.This wine was sourced from our Claim 431Vineyard in the Bendigo sub-region of CentralOtago. The vineyard’s free draining loam soilsover schist gravel make it a natural home forgrowing outstanding Pinot Noir. The hugediurnal temperature variation, adds to thestructure and fruit concentration of the wine. The grapes were gently picked, allowingwhole berries to remain intact. After a weeklong cold soak, each parcel was fermentedwith a combination of wild and cultured yeasts.The batches were plunged daily to extract thevibrant colour, flavour and delicate tanninstructure. Parcels were pressed separately to amix of French oak barrels or remained in tank.In the spring after completing malolacticfermentation, each parcel was tasted andblended.
