Hand-picked fruit from the Derwent, Tamar and Coal River Valleys. Fermented with both wild and cultured yeasts. 23% matured for 3 months in seasoned French oak barrels. Textbook gris. All the fresh and glacé pear that we love of this variety, bathed in mixed spice and wild honey. Confident acid cut unites with carefully gauged phenolic grip, so integral to this grape, marking out a long finish of confidence and definition.

How's it taste?
Pale straw in colour, with green tinges, this wine has a gentle aroma of sweet pear and rosewater. A lively and textured palate of baked pears and Turkish delight, the mouthfeel is textured and long. This wine blends two distinct styles of Pinot Gris. Some parcels are fermented cool in stainless steel to retain primary aromatics of pear and rosewater. About 20% of the blend is fermented warm in seasoned French Oak barrels to create texture and a touch of funk. All components spend about 3 months on yeast lees with periodic stirring to promote texture, body and complexity. Food Suggestion: Spiced baked savoury apple and quince tart served with goat’s cheese
How was it made?
2020 in Tasmania was a very challenging year for viticulture. A very dry but cool lead up to December combined with constant windy conditions led to slow growth, extended flowering and poor set, resulting in a low yields and significant variation in ripening within bunches. The extended, late season and variation in bunches saw high retention of malic acid across most regions, and vineyards losing leaves earlier than we would have liked. This year’s Aromatics have elegant frames and benefited from added texture brought about by barrel fermentation components. A tough year to work through but with very pleasing results.
