This bold, ripe shiraz has aromas of olives and red plums, as well as currants and cedar. The palate has a very fleshy and juicy feel with sweet, spicy blueberries and dark plums. Bold and flavorful. Drink over the next five years.
Intense cracked black pepper, the darkest chocolate, blue fruits and some freshly turned earth. Inky and initially brooding. The palate shows typical characters of liquorice, pepper and blue fruits. While intense and densely wound the palate does have a liveliness and freshness that maintains a sense of composure and balance. Given time to breath greater succulence comes through.
How was it made?
The 10 Ha of Shiraz was handpicked in separate parcels dependent on soil type. Sorted in the vineyard, destemmed, sorted postdestemmer and then feed by gravity into small open top fermenters to achieve lots of whole berries. Just under 4 weeks on skinsbefore pressing into French oak (20 % new) maturation. Part of the oak maturation included fermentation and then storage in a 2000 ltoak vat, which is offering a more supportive and textural influence on the fruit. Racked once out of oak and bottled in November2019. The wine reflects not only a strong overall vintage for Heathcote Shiraz but also the combination of a number of refinements inviticulture and winemaking in recent years.
