Grape varieties: 20% Muller Thürgau, 60% PinotGris, 20% AuxerroisVinification:Fermentation using local yeasts was carried out at low a temperature. SEPTENTRION is theresult of a very strict selection of the richest and most concentrated wines coming from ourvarious terroirs. These wines are powerful enough to withstand 100% production in barrels ofdifferent origins (French or Hungarian sessile oak, American white oak), different ages (30%are new), different degrees of barrel toasting and different volumes (400 l, 500 l and 225 l).The transfer to casks and stirring is carried out over a 10 month period for this vintage. Thewines undergo a complete malolactic fermentation. Blending and bottling are done at theChâteau in May.Some notes on tasting:SEPTENTRION is comparable to none other; it draws its originality from entirely regionalgrape varieties- Muller-Thürgau, Pinot Gris and Auxerrois- yet are vinified here according toa more Burgundian method by letting malolactic fermentation take place and by aging thewine in oak casks. The result is a wine with character that has a striking intensity andcomplexity to its bouquet. Fresh butter, hazelnut and apricot compete at the attack, withlicorice and yellow peaches later mingling harmoniously. The wine extols its aromaticcomplexity on the palate, where richness and intensity reveal an exceptional vintage.Goes well with:Sea bass in cream, roast sole with chanterelle mushrooms, crispy veal sweetbreads, quail withchestnut cream… fish or white meats as well as goat cheeses: indulge in its fullness andflavors!
