Winemaking The orange winemaking process begins in early September with the harvest of perfectly ripe Zibibbo grapes. Fermentation occurs spontaneously using the grapes' natural yeasts. This maceration-fermentation period lasts over 20 days, during which the skins gently impart their color and aroma to the wine.
