Sure, Shiraz is the hero in the Clare Valley in most people's eyes. But look a little closer and it's hard to go past some of the structured Clare Cabs too.

How's it taste?

Our 2017 Cabernet Sauvignon opens with aromas of blackberry, cassis and orange peel, with hints of chestnut and forest floor. The palate shows vibrant, ripe blackberry flavours and nutty toasted oak. Fine chalky tannins and fruit are carried through the length of the palate

How was it made?

The fruit from each vineyard site was picked independently of the others, when it reached an optimum level of flavour. Each parcel was then cold soaked for five days and fermented in 10 tonne open-top fermenters. Daily pump overs maximised extraction of colour, flavour and tannins from the berries. Parcels had contact with French and American oak for maturation. The winemaking team tasted each individual component before creating the final blend, which consists of only the highest quality components
