A deep but vibrant honey color, one of Australia's most famous dessert wines is a beaut to look at. It's pretty tasty too. Aromas of baked pear and lemon verbena are backed by spicier ones like nutmeg, vanilla and butterscotch, with flickers of green herbs like mint and fennel. The mouthfeel is rich and tongue-coasting. It's intense but but with just enough acidity to keep it from being cloying. The honeyed sweetness dominates the palate, and the more subtle aromas get lost, but drink this chilled from a sherry glass with a salty cheese and it will be a delight.

Tasting Notes
A tapestry of nectarines and peaches, mandarin zest, drizzled with a little spiced honey and vanilla scents. Rich, complex yet refined with a beautiful balance of sweetness and acidity aftertaste completing the picture deliciously.
Winemakers Note
Careful and constant monitoring of the vineyards determines the best time to harvest the fruit for Noble One, when both the Botrytis flavour and sweetness levels are in unison. Each vineyard is treated individually with 85% being matured in a combination of new and older French oak barriques. We then take the very best parcels and weave them together, fuzing a harmonious blend of Noble One.

By default, orders containing 'Pre-Order' or 'Wine Collective Marketplace' products will be dispatched once all items have been received in our Sydney warehouse.
