How's it taste?

How was it made?

This wine has been crafted utilising fruit sourced from three separate blocks on the Yallingup Hills estate: Blocks 3 and 4, two premium blocks of 25-year-old Cabernet Sauvignon vines and Block 5 Merlot; the latter block being planted in 1987. A small amount of Cabernet and Malbec from the neighbouring property of Abbey Vale, also in the heart of the Yallingup sub-region, features in the 2016 blend. All of the constituent vineyard parcels were fermented separately, using a variety of techniques. The individual parcels were matured for 12 months in 30% new and 70% seasoned French oak barriques. From these parcels we have strived to blend a wine that has great depth and intensity of fruit and speaks strongly of the premium Cabernet program at Deep Woods Estate.

Who made it?

Deep Woods Estate was founded in the northern end of the beautiful Margaret River region of W.A in 1987. It changed hands in 1992 when the Gould family purchased the winery, and was sold again in 2005. Today, it is part of the Fogarty Wine Group (they also own Lakes Folly, Millbrook and Smithbrook wines). The property nests on a ridge overlooking a sea of Jarrah and Marri trees, hence the name Deep Woods. It boasts 16 hectares of sustainably-managed, low-yielding vineyards segregated into 12 blocks planted to Semillon, Sauvignon Blanc, Verdelho, Chardonnay, Merlot, Shiraz, Cabernet Sauvignon and Cabernet Franc. Winemaker Julian Langworthy employs traditional and state-of-the-art techniques to craft small batches of wines of impeccable quality under several different labels. The Deep Woods Reserve label is the ultra-premium range made entirely from estate-grown fruit. The Estate range brings beautiful varietal character and vibrancy while offering excellent value for money, whilst the Ebony, Ivory and Harmony label uses estate and locally sourced fruit. Stylistically they range from complex, zesty, nutty Chardonnays through to cassis and chocolate Cabernet Sauvignons displaying Margaret River typicity.
