How's it taste?
Five years resting in the cellar have reshaped this wine into a more toasty and honeyed style, still classically Watervale Riesling, yet now possessing new complex and textural qualities that have opened up whole new food pairing possibilities. Hints of grapefruit, citrus rind, and candied fruits abound yet still tied to a steely acid spine so typical of the variety.

James Halliday - Halliday's Wine Companion
Hand-picked from a single 55yo vineyard at 450m, light crushed and destemmed with only the free-run used, fermented with cultured yeast. Fully mature vines and elevation are doubtless part of the contributors to the depth of this wine, and its obviously been picked at the right time. It's readyish now, but 5+ years in bottle won't harm it.

Huon Hooke - The Real Review
Very light straw colour with an earthy, savoury bouquet at the less floral end of the spectrum. It's very dry in the mouth, with a degree of austerity. Zesty acidity lifts the finish and after-palate.
