2015 Tahbilk Cabernet Sauvignon
You want ageworthy medium bodied Cabernet that is all class? Then Tahbilk is your wine. That classic, red dust and blackberry flavour is Central Victoria to a tee. All this needs is even more time in your cellar
“Unimpeachable varietal expression from the first whiff of the bouquet to the finish of the medium-bodied palate. A fusion of cassis/blackcurrant, black olive, bay leaf and savoury tannins. As is usual, oak plays a minor role in shaping flavour.” 94 points - James Halliday's Wine Companion
How’s it taste?
Cedary Cabernet notes on a dry and long savoury palate with firm tannins. Made for ageing.
Who made it?
The name Tahbilk comes from the language of the Daung-wurrung clans, the first people in the area. They called it tabilk-tabilk which means place of many waterholes. Tahbilk Wines was established in 1860 in the Nagambie lakes sub region of Victoria’s Goulburn Valley. It is home to a unique meso-climate, influenced by inland lakes and lagoons fed from the Goulburn River. Purchased by the Purbrick family in 1925, Tahbilk is home to 5 generations. Tahbilk is home to 200 hectares of vine, including the traditional Rhone Valley varietals Marsanne, Viognier, Roussanne, Shiraz, Grenache and Mourvedre. Classic varieties such as Cabernet Sauvignon, Merlot, Cabernet Franc, Chardonnay, Riesling, Semillon, Sauvignon Blanc and Verdelho are also present. Tahbilk's flagship 1860 Vines Shiraz is produced from the estate’s original 1/2 ha of ungrafted, pre-phylloxera Shiraz vines that are amongst the oldest in the world.
