How's it taste?

How was it made?

Tahbilk has some 28 hectares of Estate Cabernet Sauvignon, the oldest vines dating back to 1949. Crafted with a commitment to traditional wine making values, fermentation takes place in original open vats over 155 years old, with maturation then in similarly aged large French oak prior to bottling. Smaller French and American oak barrels are also used, with the wine from these blended back during the final filtering and bottling.

This special Anniversary wine was sourced and made from some of the estates older plantings, then judiciously cellared for later release.

Tahbilk Cabernet Sauvignon releases have shown consistently over time considerable richness and character and are considered by many experts to be the best Estate red for long-term cellarage.

Who made it?

The name Tahbilk comes from the language of the Daung-wurrung clans, the first people in the area. They called it tabilk-tabilk which means place of many waterholes. Tahbilk Wines was established in 1860 in the Nagambie lakes sub region of Victoria’s Goulburn Valley. It is home to a unique meso-climate, influenced by inland lakes and lagoons fed from the Goulburn River. Purchased by the Purbrick family in 1925, Tahbilk is home to 5 generations. Tahbilk is home to 200 hectares of vine, including the traditional Rhone Valley varietals Marsanne, Viognier, Roussanne, Shiraz, Grenache and Mourvedre. Classic varieties such as Cabernet Sauvignon, Merlot, Cabernet Franc, Chardonnay, Riesling, Semillon, Sauvignon Blanc and Verdelho are also present. Tahbilk's flagship 1860 Vines Shiraz is produced from the estate’s original 1/2 ha of ungrafted, pre-phylloxera Shiraz vines that are amongst the oldest in the world.
