He reintroduced traditional, pre-industrial growing methods, reviving the Domaine and creating something truly distinctive and extraordinary.\r\n\r\nMaxime and Alain Graillot introduced us to Moreau's wines, and upon our first visit, we were mesmerized by the texture, depth, and hedonistic pleasure they offered. But tragedy struck when Stéphane Moreau unexpectedly passed away on the eve of the 2016 harvest, leaving a void in the Chablis community. He was not only a talented winemaker but also a generous, warm, and free-spirited soul who is deeply missed.\r\n\r\nUnder the guidance of Virginie Moreau, the Domaine has continued to thrive and was recently awarded two stars in La Revue du Vin de France, placing it among the top tier of Chablis producers. This is a testament to Stéphane's legacy and Virginie's dedication to carrying on his work. However, it hasn't been easy for her, as the Domaine has faced three severely frost-affected harvests in her first four years.\r\n\r\nMoreau-Naudet's style is characterized by low yields, ripe fruit, and a distinctive mineral freshness intertwined with generous and pulpy flavors. This is a reflection of the Domaine's philosophy of organic and sustainable farming practices, with no chemical treatments or weed killers used in the vineyards. Virginie, like Stéphane, hand-harvests slightly later than her neighbors to achieve perfect ripeness.\r\n\r\nIn the cellar, the grapes are pressed in a Champagne-style press for a finer juice, fermented naturally at warm temperatures, and aged in steamed barrels with minimal use of new oak. But what truly sets Moreau's wines apart is their long élevage, with even the village wine spending 18 months on lees. This results in wines with added complexity, natural stability, and a strong sense of place.\r\n\r\nThe Wine Advocate's William Kelley describes Moreau's wines as \"some of the most characterful wine to be found in Chablis,\" a testament to the Domaine's commitment to quality and expression.
