Their passion and dedication to preserving these vines is evident in every bottle of their exquisite wines.\r\n\r\nAfter honing her skills in viticulture and gaining invaluable experience in renowned French vineyards, Diane took over the family estate and embarked on a journey to create something truly special. With a focus on biodynamic farming, the Cauvins have taken great care to cultivate their vines in harmony with nature, using only the finest techniques to bring out the best in their regional variety, Negrette.\r\n\r\nThe terroir of La Colombiere is a perfect marriage of gravel and sandy alluvial soils, enriched by the Tarn river terraces. Here, the vines, some as old as 70 years, thrive in their natural habitat, producing grapes of exceptional quality and character.\r\n\r\nIn the cellar, the Cauvins follow a 'hands-off' approach, allowing the grapes to speak for themselves. Using gravity to gently handle the grapes and minimal intervention in the winemaking process, they create wines that are a true reflection of their terroir and the passion that goes into every bottle.\r\n\r\nSo while Diane and Philippe may claim that their winemaking is not rocket science, we can't help but admire their dedication and skill in crafting fresh and floral wines that can be enjoyed at any time of day (in moderation, of course).
